A popular vegetable in Asian cuisine, Water Spinach grows very readily in ideal environments.

As the Botanical name Ipomoea aquatica suggests, this plant likes to grow in wet soggy soil, which can be achieved in pots with minimal or no drainage holes.  Both the leaves and hollow stems are edible, its mild taste is like a cross between spinach and watercress.
