Cichorium intybus
Dark green head with rosette.  Harvest as a cut-and-come-again or loose leaves for salads and risottos.  Slightly bitter tasting but the bitterness will reduce if exposed to frost, soaking in ice cold water or cooking.
If grown for Autumn harvest, initial growth is a somewhat elongated head with large rounded leaves.  After cutting, leave the root and crown and you will get the grumolo rosettes in the spring.  Alternately, plant later in summer and you should get rosettes the following spring.
